500gr white cheese
100gr caster sugar
3 eggs, white and yolk separated
60gr cornstarch
1 organic lemon ( untreated)
1 vanilla pod
1- Whisk the white cheese with half of sugar and the cornstarch. Then add the yolks lightly beaten. Add half of the lemon juice and vanilla seeds.
2- Beat the white in firm snow with the remaining sugar and incorporate them delicately to the previous preparation.
3- Poor into a buttered mould and cook in a preheated oven (200°, th. 6-7) during 35 mn.
